CLIMABIGA chambers The climatic chambers are equipped with a CLIMABIGA computer which allows the conservation/fermentation of the raw bread dough and/or bulk dough pieces at a constant temperature in spite of the external climatic conditions changes. The conservation/fermentation can be extended automatically from Saturday to Tuesday (i.e. 24-48-72 hours), offering the following advantages:
The fact that the cabinet can be constructed with modular panels allows the creation of an unlimited range of models capable of meeting any customer's requirement. The NETTUNO, MARTE, SATURNO and PLUTONE chambers, equipped with the new ALASKA CLIMABIGA computer, are able to take racks of various sizes. |
