The Alaska electronic control panel is equipped with specific software for the management of the dough-retarding process with automatic programmed proving. It can operate on the automatic cycle (accumulation, conservation, proving, sleeping), conseravation only (accumulation, conservation), proving only or dough-retarder of risen product (sleeping).



It is possible to select the type of product collocated (fresh, frozen, "panettone" or pizza) in order to obtain the best result possible for each products. It is possible to set 4 recipes for each type of product, with a total of 16 recipes for the automatic cycle and one for each manual cycle. It is pre-arranged for the connection to a TELEASSISTANCE and/or SUPERVISION network.
Repeatable calendar with automatic management of the day, month, year and leap year. Display of active phases, of the type of product and the active cycles by means of LEDs.
Constant check-control of the active alarms with display.
