Retarder Proofer Cabinet for trays

Retarder proofer cabinet for 60x40 cm trays, available in the 20 or 40 trays version, the ideal equipment to control the leavening of bakery and pastry products. By managing temperature and humidity the leavening process can be slowed down, to allow the baker to prepare it during the day and find it perfectly leavened and ready for baking the next morning.
